Savory Mustard Rubbed Lamb

Ingredients
- 3 lbs boneless lamb loin
- 2 tablespoons dijon mustard
- 3 tablespoons parsley, fresh, minced
- 1 tablespoon thyme, fresh, minced
- 1 tablespoon rosemary, fresh, minced
- 1 tablespoon garlic, minced
- 1 tablespoon olive oil
- salt
- pepper
Recipe
- 1 heat oven to 450 degree fahrenheit.
- 2 season lamb loin with salt and pepper.
- 3 in bowl, combine remaining ingredients.
- 4 rub herb-mustard-mixture evenly over lamb.
- 5 place lamb in roasting pan and roast for 10 minutes.
- 6 reduce oven temperature to 250 degree fahrenheit.
- 7 roast for 1 hour more or until inserted thermometer reads 160 degrees fahrenheit.
- 8 transfer lamb loin to platter, cover loosely with foil.
