Cucumber-yogurt Dip

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 24
  • 1 1/2 cups greek yogurt or 1 1/2 cups yogurt cheese
  • 3 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons chopped fresh chives
  • 1 tablespoon lemon juice
  • 1 -2 garlic clove, minced
  • 1/2 teaspoon salt
  • 2 cups chopped seedless cucumber
  • salt
  • cracked pepper
  • 1 sprig fresh dill (to garnish)

Recipe

  • 1 in a bowl stir together yogurt, dill, mint, chives, juice, garlic and salt.
  • 2 let stand 15 minutes or refrigerate up to 12 hours.
  • 3 before serving, stir in cucumber.
  • 4 season with salt & pepper.
  • 5 top with dill sprig.
  • 6 serve with your favorite crackers, pita chips or veggies.
  • 7 this yields about 24 two tablespoon servings.
