Cucumber-yogurt Dip For Vegetables

Ingredients

  • 2 cups plain greek yogurt
  • 1 tablespoon lemon juice
  • 1/2 cup olive oil
  • 1/2 garlic clove (finely chopped)
  • 1/2 cucumber (peeled, seeded and chopped)
  • 1/2 small onion (finely chopped)
  • salt, to taste

Recipe

  • 1 in a bowl, whisk the yogurt, lemon jucie, olive oil, garlic and salt.
  • 2 stir in the cucumber and onion.
  • 3 cover and chill for at least 1 hour.
  • 4 serve with raw vegetables or crackers.
