Sauteed Leeks And Broccolini With Balsamic Vinegar

Ingredients
- Servings: 6
- 1 tablespoon olive oil
- 1 lb broccolini, trimmed and cut in half crosswise
- 2 leeks, halved lengthwise and cut diagonally into 2 inch pieces
- 1/4 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes
- 4 garlic cloves, thinly sliced
- 1/4 cup low sodium vegetable broth
- 1 1/2 tablespoons balsamic vinegar
- 3/4 teaspoon salt
Recipe
- 1 heat oil in a large pan over med heat.
- 2 add broccolini and leeks, saute 4 minutes.
- 3 add oregano, pepper, garlic and saute 3 minutes.
- 4 stir in remaining ingredients and cook until liquit almost evaporates - about 30 seconds.
