Sauteed Leeks And Broccolini With Balsamic Vinegar

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 1 tablespoon olive oil
  • 1 lb broccolini, trimmed and cut in half crosswise
  • 2 leeks, halved lengthwise and cut diagonally into 2 inch pieces
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • 4 garlic cloves, thinly sliced
  • 1/4 cup low sodium vegetable broth
  • 1 1/2 tablespoons balsamic vinegar
  • 3/4 teaspoon salt

Recipe

  • 1 heat oil in a large pan over med heat.
  • 2 add broccolini and leeks, saute 4 minutes.
  • 3 add oregano, pepper, garlic and saute 3 minutes.
  • 4 stir in remaining ingredients and cook until liquit almost evaporates - about 30 seconds.
