Cucumber Mint Raita

Total Time: 20 mins Preparation Time: 20 mins

Ingredients

  • Servings: 5
  • 2 large cucumbers, peeled,halved,seeded
  • 1/2 large red onion, sliced thinly
  • 1/2 cup plain nonfat yogurt
  • 1 clove garlic, peeled,minced
  • 2 tablespoons fresh mint or 2 tablespoons fresh coriander, chopped
  • cayenne or paprika, for garnish (optional)

Recipe

  • 1 slice cucumber halves into thin half-moons.
  • 2 blot off moisture with paper towels.
  • 3 put veggies in a bowl.
  • 4 mix yogurt, garlic, and mint together and add to veggies.
  • 5 toss to coat.
  • 6 sprinkle with pepper, if desired.
  • 7 chill before serving.
