Mom's Lentil Sausage Casserole

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • 2 cups lentils
  • 2 tablespoons oil
  • 2 medium onions
  • 3 cloves
  • 1 (14 ounce) can diced tomatoes, drained
  • 1 lb kielbasa
  • 1 -2 teaspoon sugar
  • 1/2 teaspoon pepper
  • 1 bay leaf
  • salt and pepper
  • red wine or sherry wine

Recipe

  • 1 put lentils in large pot and over with salted water.
  • 2 boil, then cover and cook about 20 minutes (or until done). reserve liquid if desired.
  • 3 heat oil in large baking dish, stir in chopped onions and garlic.
  • 4 cook until tender.
  • 5 add canned tomatoes.
  • 6 cut vegan sausage into 1/2 inch slices.
  • 7 toss sausage with tomato mixture, add lentils, sugar, salt and pepper and bay leaf.
  • 8 bake 350 degree oven about 30 minutes.
  • 9 add reserved liquid or use 1 small can of v-8 or wine, sherry if dry.
