Mom's Lentil Sausage Casserole

Ingredients
- 2 cups lentils
- 2 tablespoons oil
- 2 medium onions
- 3 cloves
- 1 (14 ounce) can diced tomatoes, drained
- 1 lb kielbasa
- 1 -2 teaspoon sugar
- 1/2 teaspoon pepper
- 1 bay leaf
- salt and pepper
- red wine or sherry wine
Recipe
- 1 put lentils in large pot and over with salted water.
- 2 boil, then cover and cook about 20 minutes (or until done). reserve liquid if desired.
- 3 heat oil in large baking dish, stir in chopped onions and garlic.
- 4 cook until tender.
- 5 add canned tomatoes.
- 6 cut vegan sausage into 1/2 inch slices.
- 7 toss sausage with tomato mixture, add lentils, sugar, salt and pepper and bay leaf.
- 8 bake 350 degree oven about 30 minutes.
- 9 add reserved liquid or use 1 small can of v-8 or wine, sherry if dry.
