Farmer’s Market Gazpacho

Ingredients

- 5 garlic cloves, chopped
- 1 1/2 lbs tomatoes, cut in quarters
- 1 cup coarsely chopped seeded and peeled cucumber
- 1/2 cup chopped sweet onion
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped green bell pepper
- 1/2 teaspoon sea salt
- 1/2 teaspoon ground cumin
- 3 tablespoons red wine vinegar
- 1 tablespoon olive oil
- 1/2 teaspoon agave nectar
Recipe
- 1 in food processor, pulse all ingredients together until almost smooth.
- 2 cover and refrigerate at least 30 minutes before serving.
