Farmer’s Market Gazpacho

Ingredients

  • Servings: 4
  • 5 garlic cloves, chopped
  • 1 1/2 lbs tomatoes, cut in quarters
  • 1 cup coarsely chopped seeded and peeled cucumber
  • 1/2 cup chopped sweet onion
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped green bell pepper
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground cumin
  • 3 tablespoons red wine vinegar
  • 1 tablespoon olive oil
  • 1/2 teaspoon agave nectar

Recipe

  • 1 in food processor, pulse all ingredients together until almost smooth.
  • 2 cover and refrigerate at least 30 minutes before serving.
