Olive Dip

Ingredients
- Servings: 6
- 9 ounces pitted green olives, roughly chopped
- 3 tablespoons olive oil
- 1 (14 ounce) can chopped tomatoes
- 2 garlic cloves, peeled and minced
- 1/2 red onion, peeled and finely chopped
- 2 teaspoons tomato paste
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
Recipe
- 1 heat the olive oil in a saucepan, over a medium heat. add the tomatoes, garlic, onion and tomato paste and bring to the boil.
- 2 reduce the heat and simmer gently for 5 minutes, then add the paprika, cayenne, olives and 4 tbs water.
- 3 simmer gently, uncovered for about 15 minutes, or until the dip thickens.
- 4 remove the saucepan from the heat and allow to cool to room temperature.
- 5 if time allows, chill before serving.
