Olive Dip

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 9 ounces pitted green olives, roughly chopped
  • 3 tablespoons olive oil
  • 1 (14 ounce) can chopped tomatoes
  • 2 garlic cloves, peeled and minced
  • 1/2 red onion, peeled and finely chopped
  • 2 teaspoons tomato paste
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper

Recipe

  • 1 heat the olive oil in a saucepan, over a medium heat. add the tomatoes, garlic, onion and tomato paste and bring to the boil.
  • 2 reduce the heat and simmer gently for 5 minutes, then add the paprika, cayenne, olives and 4 tbs water.
  • 3 simmer gently, uncovered for about 15 minutes, or until the dip thickens.
  • 4 remove the saucepan from the heat and allow to cool to room temperature.
  • 5 if time allows, chill before serving.
