Super Healthy Pizza

Ingredients
- Servings: 2
- 1 lb pizza dough
- 200 g chopped tomatoes, juice drained
- 1 cup cherry tomatoes, halved
- 1 zucchini, thinly sliced
- 25 g mozzarella cheese, torn into pieces (use more if you love cheese!)
- 1 teaspoon capers, drained
- 8 green olives, roughly chopped
- 1 garlic clove, finely chopped
- 2 tablespoons fresh parsley, chopped
Recipe
- 1 spread the dough to cover the bottom of an oiled 12" pizza pan.
- 2 spread the canned tomatoes over the dough to within 1" of the edge.
- 3 arrange the cherry tomatoes and zucchini over the top, then scatter with the mozzarella.
- 4 mix the capers, olives and garlic, then scatter over the top.
- 5 drizzle evenly with olive oil and leave to rise for 20 minutes.
- 6 heat the oven 475 degrees f and bake for 10 to 12 minutes, or until crisp and golden around the edges.
- 7 sprinkle with the parsley to serve.
