Lighter Calorie Pesto

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • 4 cups basil
  • 5 garlic cloves
  • 2 tablespoons parmesan cheese
  • 1/4 cup pine nuts
  • 1/8 cup olive oil
  • 1/8 cup lemon juice
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Recipe

  • 1 toast the pine nuts in a dry skillet. stir often to prevent burning.
  • 2 place all ingredients in a food processor and chop until smooth. add cold water one tablespoon at a time if it gets too thick to continue blending.
