Summer Zucchini

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 yellow squash, sliced
  • 2 zucchini, sliced
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons of freshly chopped fresh basil (has to be fresh- dried doesn't work)
  • 3 tablespoons extra virgin olive oil
  • 2 garlic cloves, minced

Recipe

  • 1 saute squash and zucchini in olive oil on medium heat for 4 minutes.
  • 2 add garlic and saute until squash and zucchini become transparent (about 2 or 3 more minutes).
  • 3 remove from heat. add basil and mozzarella and toss. shake parmesan over the top and serve.
