Scrumptious Vegetable Chili

Total Time: 8 hrs 5 mins Preparation Time: 5 mins Cook Time: 8 hrs

Ingredients

  • Servings: 14
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 onion, chopped (i use 2 16 ounce bags frozen birdseye pepper stir fry instead)
  • 1 tablespoon minced garlic
  • 1 1/2 tablespoons hot sauce, i use tabasco
  • 1/2 teaspoon ground thyme
  • 1 1/2 tablespoons oregano, in my house this is optional
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 (19 ounce) can cannellini beans, undrained
  • 1 (19 ounce) can black beans, undrained
  • 1 (19 ounce) can kidney beans, undrained
  • 2 (28 ounce) cans whole tomatoes, undrained and chopped

Recipe

  • 1 mix all ingredients together in a crock pot.
  • 2 cook on low 6-8 hours.
