Scallops In Pesto

Ingredients
- Servings: 3
- 1 carrot, julienned
- 1 garlic clove, crushed
- 2 tablespoons olive oil
- 1 green onion, chopped
- 1 small tomato, diced
- 3/4 lb scallops
- 2 tablespoons dry wine
- 1 tablespoon lemon juice
- 1 tablespoon pesto sauce
- salt and pepper
Recipe
- 1 in a large frying pan, heat the olive oil and sauté the carrot and garlic for just a minute or two.
- 2 add the green onion and tomato. sauté until the tomato is soft.
- 3 keep heat on high and add the scallops. sauté until just tender, less than 5 minutes.
- 4 add the wine, lemon juice, pesto, salt and pepper.
- 5 toss quickly and serve warm.
