Scallops In Pesto

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 3
  • 1 carrot, julienned
  • 1 garlic clove, crushed
  • 2 tablespoons olive oil
  • 1 green onion, chopped
  • 1 small tomato, diced
  • 3/4 lb scallops
  • 2 tablespoons dry wine
  • 1 tablespoon lemon juice
  • 1 tablespoon pesto sauce
  • salt and pepper

Recipe

  • 1 in a large frying pan, heat the olive oil and sauté the carrot and garlic for just a minute or two.
  • 2 add the green onion and tomato. sauté until the tomato is soft.
  • 3 keep heat on high and add the scallops. sauté until just tender, less than 5 minutes.
  • 4 add the wine, lemon juice, pesto, salt and pepper.
  • 5 toss quickly and serve warm.
