Salsa Fresca

Total Time: 15 mins Preparation Time: 15 mins

Ingredients

  • 6 medium plum tomatoes, seeded and finely diced
  • 1 onion, finely diced
  • 2 garlic cloves, minced
  • 3 -5 fresh green chilies, seeded and finely chopped (use either jalapeno or serrano)
  • 1 lime, juice of
  • 2 tablespoons olive oil
  • 4 tablespoons cilantro, finely chopped
  • salt and black pepper

Recipe

  • 1 combine tomatoes, onion, garlic, chile, lime juice, oil and cilantro.
  • 2 add salt and pepper to taste.
  • 3 cover and let stand for 30 minutes at room temperature to allow flavours to blend.
  • 4 serve chilled or at room temperature.
  • 5 should be served the day it is made.
