Leeks With Toasted Cheese Sauce

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 700 g even size leeks
  • salt
  • ground black pepper
  • 25 g butter
  • 25 g plain flour
  • 124 g light soft cheese, with garlic and herbs
  • 15 g freshly grated parmesan cheese

Recipe

  • 1 place leeks in a pan of cold salted water, bring to the boil and boil for 2-3 min or until tender.
  • 2 drain and reserve 300ml (1/2 pint) of the cooking liquid.
  • 3 melt the butter in a saucepan, add the flour and mix until smooth.
  • 4 blend in the reserved liquid and bring to boil, stirring continuously.
  • 5 add the soft cheese, season and return to the boil.
  • 6 arrange the leeks in a shallow flameproof dish, then pour the sauce over the top and sprinkle with parmesan cheese.
  • 7 place under a preheated grill until golden and bubbling.
  • 8 garnish with a sprinkle of paprika.
  • 9 serve immediately.
