Leeks With Toasted Cheese Sauce

Ingredients
- Servings: 4
- 700 g even size leeks
- salt
- ground black pepper
- 25 g butter
- 25 g plain flour
- 124 g light soft cheese, with garlic and herbs
- 15 g freshly grated parmesan cheese
Recipe
- 1 place leeks in a pan of cold salted water, bring to the boil and boil for 2-3 min or until tender.
- 2 drain and reserve 300ml (1/2 pint) of the cooking liquid.
- 3 melt the butter in a saucepan, add the flour and mix until smooth.
- 4 blend in the reserved liquid and bring to boil, stirring continuously.
- 5 add the soft cheese, season and return to the boil.
- 6 arrange the leeks in a shallow flameproof dish, then pour the sauce over the top and sprinkle with parmesan cheese.
- 7 place under a preheated grill until golden and bubbling.
- 8 garnish with a sprinkle of paprika.
- 9 serve immediately.
