Feta Cheese And Scallion Muffins With Rosemary

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 280 g flour
  • 3 teaspoons baking powder
  • 1/8 teaspoon salt
  • 2 generous dashes ground chili peppers
  • 1/4 teaspoon freshly grated nutmeg
  • 1/4 teaspoon garlic powder (or use 1 fresh clove, chopped)
  • 1 -2 teaspoon dried rosemary
  • 1/4-1/2 teaspoon black pepper (freshly ground)
  • 3 -4 scallions, sliced
  • 150 g feta cheese, diced (or try goats cheese)
  • 2 eggs, beaten
  • 250 g plain yogurt (or try buttermilk)
  • 6 tablespoons oil

Recipe

  • 1 in a big bowl combine all of the dry ingredients. add the scallion slices and the feta cheese. toss to combine.
  • 2 in a second bowl combine eggs, oil and yogurt.
  • 3 add the wet to the dry ingredients and mix until just combined.
  • 4 fill into prepared muffin tins and bake in the preheated oven at 180° c/350°f for 20 minutes or until toothpick inserted in the centre comes out clean.
  • 5 enjoy! :).
