Pickled Carrots

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 11 cups sliced carrots
  • 6 teaspoons dried oregano leaves
  • 4 teaspoons finely chopped red peppers
  • 2 teaspoons finely chopped green peppers
  • 2 teaspoons finely chopped jalapenos
  • 2 teaspoons minced garlic
  • 5 cups vinegar
  • 1 2/3 cups sugar
  • 1 2/3 cups water
  • 4 teaspoons pickling salt

Recipe

  • 1 combine peppers and garlic and set aside.
  • 2 prepare pickling liquid-combine vinegar, sugar, water and salt.
  • 3 bring to a boil and boil for 5 min.
  • 4 add the carrots, return to a boil and boil for 2 min.
  • 5 prepare 6 pint jars.
  • 6 place 5 t's of pepper mix in each jar plus 1 t.
