Fresh Tomato Sauce

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • 3 tablespoons olive oil
  • 2 onions, finely chopped
  • 1 stick celery
  • 10 tomatoes, peeled and chopped
  • 2 garlic cloves, finely chopped
  • 2 tablespoons tomato paste
  • 1 teaspoon brown sugar
  • 3 tablespoons red wine
  • salt and black pepper

Recipe

  • 1 heat the oil in a frying pan over medium heat. add the onion and celery, and gently fry for about 7 minutes until soft.
  • 2 stir in the remaining ingredients and season to taste. bring to the boil, then lower the heat and simmer for 25-30 minutes until reduced and thickened.
