Romesco Sauce

Ingredients

  • Servings: 8
  • 1 tomato, peeled seeded and chopped
  • 1 small dried hot red chili pepper, minced
  • 3 garlic cloves, minced
  • 3/4 cup dry wine
  • 2 tablespoons wine vinegar
  • 2 tablespoons dry sherry
  • salt and pepper

Recipe

  • 1 process all ingredients, except the salt and pepper, in a food process or blender until smooth; season to taste with salt and pepper.
