Refried Beans The Easy (but Tasty) Way

Ingredients

- 1 (15 1/2 ounce) can black beans, undrained
- 1 tablespoon olive oil
- 1/4 small onion, diced
- 2 cloves garlic, minced
- salt and pepper
- 2 tablespoons crumbled fresh cheese or 2 tablespoons shredded monterey jack cheese
Recipe
- 1 in a bowl, mash beans with fork or spoon.
- 2 heat oil in a skillet on medium.
- 3 add onion and garlic to skillet and cook until tender.
- 4 add beans, salt and pepper and cook, stirring often, until bean liquid starts to evaporate.
- 5 reduce heat and simmer until desired consistency, about 5 minutes.
- 6 serve with cheese over the top.
