Refried Beans The Easy (but Tasty) Way

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 (15 1/2 ounce) can black beans, undrained
  • 1 tablespoon olive oil
  • 1/4 small onion, diced
  • 2 cloves garlic, minced
  • salt and pepper
  • 2 tablespoons crumbled fresh cheese or 2 tablespoons shredded monterey jack cheese

Recipe

  • 1 in a bowl, mash beans with fork or spoon.
  • 2 heat oil in a skillet on medium.
  • 3 add onion and garlic to skillet and cook until tender.
  • 4 add beans, salt and pepper and cook, stirring often, until bean liquid starts to evaporate.
  • 5 reduce heat and simmer until desired consistency, about 5 minutes.
  • 6 serve with cheese over the top.
