Mussels In Rich Tomato Broth

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 teaspoons vegetable oil
  • 2 spanish onions, chopped
  • 2 garlic cloves, crushed
  • 1 pinch saffron threads soaked in 1 tblsp hot water
  • 1 kg mussels, scrubbed, beards removed
  • 2 cups tomato juice
  • 1 cup dry wine
  • 2 tablespoons brown sugar
  • 2 teaspoons finely grated lemon rind
  • 3 tablespoons basil, chopped

Recipe

  • 1 heat oil in wok over medium heat.
  • 2 add onions and garlic, stir fry for 3 minutes or till onions are golden.
  • 3 add saffron mixture and stirfry for 2 minutes more.
  • 4 add mussels, juice, wine, sugar, lemon rind.
  • 5 bring to boil, reduce heat, simmer 10 minutes.
  • 6 discard any unopened mussels.
  • 7 stir in basil and serve.
