Mussels In Rich Tomato Broth

Ingredients
- Servings: 4
- 2 teaspoons vegetable oil
- 2 spanish onions, chopped
- 2 garlic cloves, crushed
- 1 pinch saffron threads soaked in 1 tblsp hot water
- 1 kg mussels, scrubbed, beards removed
- 2 cups tomato juice
- 1 cup dry wine
- 2 tablespoons brown sugar
- 2 teaspoons finely grated lemon rind
- 3 tablespoons basil, chopped
Recipe
- 1 heat oil in wok over medium heat.
- 2 add onions and garlic, stir fry for 3 minutes or till onions are golden.
- 3 add saffron mixture and stirfry for 2 minutes more.
- 4 add mussels, juice, wine, sugar, lemon rind.
- 5 bring to boil, reduce heat, simmer 10 minutes.
- 6 discard any unopened mussels.
- 7 stir in basil and serve.
