Ingredients
- Servings: 4
- 2 tablespoons extra virgin olive oil
- 2 medium zucchini, sliced
- 1 vidalia onion, sliced
- 2 garlic cloves, minced
- 8 ounces mushrooms, sliced
- 1 green pepper, sliced
- salt and pepper, to taste
- 1 sprig fresh rosemary
- 3 sprigs fresh thyme
- 2 ounces parsley
Recipe
- 1 heat a non stick skillet.
- 2 add olive oil.
- 3 add onions and garlic and sauté for 5 minutes.
- 4 add zucchini, sauté 5 minutes.
- 5 add mushrooms and pepper, saute until browned and liquid is gone.
- 6 add herbs, salt and pepper, mix well, serve.
