Summer Saute

Total Time: 23 mins Preparation Time: 10 mins Cook Time: 13 mins

Ingredients

  • Servings: 4
  • 2 tablespoons extra virgin olive oil
  • 2 medium zucchini, sliced
  • 1 vidalia onion, sliced
  • 2 garlic cloves, minced
  • 8 ounces mushrooms, sliced
  • 1 green pepper, sliced
  • salt and pepper, to taste
  • 1 sprig fresh rosemary
  • 3 sprigs fresh thyme
  • 2 ounces parsley

Recipe

  • 1 heat a non stick skillet.
  • 2 add olive oil.
  • 3 add onions and garlic and sauté for 5 minutes.
  • 4 add zucchini, sauté 5 minutes.
  • 5 add mushrooms and pepper, saute until browned and liquid is gone.
  • 6 add herbs, salt and pepper, mix well, serve.
