Salsa Verde - The Italian One

Ingredients

  • Servings: 4
  • 1 bunch italian parsley, washed
  • 1/2 garlic clove
  • 1/2 spring onion
  • 4 anchovy fillets
  • 1/2 teaspoon mustard
  • 1 tablespoon lemon juice
  • 100 ml olive oil
  • 1 hard-boiled egg, chopped (optional)

Recipe

  • 1 put first 4 ingredients in a food processor or blender and mix until smooth.
  • 2 add mustard and lemon juice, mix again.
  • 3 slowly add in olive oil while machine is running.
  • 4 taste and add salt and or pepper if needed.
  • 5 if using the hard boiled egg add it to the sauce after it is in the serving dish.
