Scallops With Crisp Snow Peas And Apples

Ingredients

  • Servings: 4
  • 1 medium onion, chopped
  • 1 small red bell pepper, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons vegetable oil
  • 2 small apples, cored and diced
  • 1 cup snow peas, trimmed
  • 16 ounces sea scallops, halved
  • 1/4 cup apple cider or 1/4 cup juice
  • 1 tablespoon soy sauce
  • 2 teaspoons cornstarch
  • salt and pepper

Recipe

  • 1 stir fry onion, bell pepper and garlic in 1 tablespoon oil, 3-4 minutes.
  • 2 add apples and snow peas and stir fry 3-4 minutes longer.
  • 3 move apples and vegetables to side of pan and add remaining oil and scallops. stir fry until scallops are cooked and tender, about 5 minutes.
  • 4 stir in combined apple cider, soy sauce and cornstarch; cook over medium high until thickened, 1-2 minutes. season to taste with salt and pepper.
