Leeks With Mushroom Sauce

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 8 leeks, trimmed and washed
  • 2 shallots, chopped
  • 2 tablespoons unsalted butter
  • 2 garlic cloves, chopped
  • 1 lb wild mushroom
  • 1 tablespoon thyme, chopped
  • 1/2 cup wine
  • 1/2 cup heavy cream
  • 1 tablespoon dijon mustard

Recipe

  • 1 blanche leeks in salted water-8 minutes.
  • 2 pat dry and split lengthwise.
  • 3 place leeks in buttered ovenproof dish.
  • 4 roast in 375f oven for 30 minutes.
  • 5 melt butter in saute pan.
  • 6 saute garlic and shallots for 3 minutes.
  • 7 add mushrooms and saute for 4 minutes.
  • 8 add thyme and wine
  • 9 simmer.
  • 10 reduce by 1/2.
  • 11 add cream and mustard.
  • 12 simmer and reduce to 1/2.
  • 13 pour sauce over leeks.
