Leeks With Mushroom Sauce

Ingredients

- 8 leeks, trimmed and washed
- 2 shallots, chopped
- 2 tablespoons unsalted butter
- 2 garlic cloves, chopped
- 1 lb wild mushroom
- 1 tablespoon thyme, chopped
- 1/2 cup wine
- 1/2 cup heavy cream
- 1 tablespoon dijon mustard
Recipe
- 1 blanche leeks in salted water-8 minutes.
- 2 pat dry and split lengthwise.
- 3 place leeks in buttered ovenproof dish.
- 4 roast in 375f oven for 30 minutes.
- 5 melt butter in saute pan.
- 6 saute garlic and shallots for 3 minutes.
- 7 add mushrooms and saute for 4 minutes.
- 8 add thyme and wine
- 9 simmer.
- 10 reduce by 1/2.
- 11 add cream and mustard.
- 12 simmer and reduce to 1/2.
- 13 pour sauce over leeks.
