Delicious Spinach With Shallots

Ingredients
- 1 tablespoon olive oil
- 1 shallot, diced
- 2 garlic cloves (or to taste)
- 1 (10 ounce) bag baby spinach leaves (i use way more)
- 1/2 teaspoon kosher salt (to taste)
- 1/2 teaspoon pepper, freshly ground (add to taste)
- 2 teaspoons balsamic vinegar (optional, add to taste. i use more)
Recipe
- 1 in a large skillet, heat olive oil over medium heat. stir in shallots and garlic and cook until transparent, about 5 minutes.
- 2 add spinach, sprinkle with salt and pepper; cook and stir 3 to 5 minutes until leaves are wilted and reduced. if using balsamic vinegar, add it in during the 3-5 minute cooking timeframe.
