Mussels With Curry Cream Sauce

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 2
  • 1 lb mussels, scrubbed,debearded
  • 1 tablespoon shallot, chopped
  • 1 teaspoon garlic, chopped
  • 1 tablespoon curry powder (madras curry-sweet-not hot!)
  • 1/2 cup wine
  • 1/4 cup creme fraiche or 1/4 cup sour cream

Recipe

  • 1 place a thin coat of olive oil in a pan over high heat.
  • 2 add shallots, garlic, and curry powder and cook~~without browning~~.
  • 3 add wine.
  • 4 bring to a boil; add mussels and cover.
  • 5 cook until the mussels have opened.
  • 6 then add creme fraiche and stir to incorporate.
