Summer Sausage

Total Time: 9 hrs 20 mins Preparation Time: 20 mins Cook Time: 9 hrs

Ingredients

  • 5 lbs ground chuck
  • 2 1/2 teaspoons coarsely ground pepper
  • 4 tablespoons morton tender quick salt
  • 1 teaspoon garlic powder
  • 2 1/2 teaspoons mustard seeds
  • 2 1/2 teaspoons liquid smoke

Recipe

  • 1 mix all ingredients together in glass or plastic bowl.
  • 2 do not use any metal!
  • 3 cover and put in refrigerator.
  • 4 mix each day for 3 days.
  • 5 on fourth day, mix and form into 5 logs.
  • 6 place on broiler pan.
  • 7 bake 150f degrees to 160f degrees for 9 hours.
