Salsa Verde

Ingredients
- 1 1/2 cups flat leaf parsley
- 1/2 cup fresh spearmint
- 1/2 cup fresh chives, chopped
- 1 clove garlic
- 2 teaspoons dijon mustard
- 4 anchovy fillets
- 2 tablespoons capers, drained
- 1/2 lemon, zest of, grated
- 1 tablespoon lemon juice
- fresh ground pepper, to taste
- 6 tablespoons extra virgin olive oil
Recipe
- 1 place all ingredients, except oil, in a blender or processor.
- 2 process until finely chopped.
- 3 with machine running slowly add the olive oil, blend until creamy.
