Ingredients

- 8 ripe medium tomatoes
- 1/2 cup chopped parsley
- 2 -3 teaspoons olive oil
- 2 -3 tablespoons tarragon vinegar
- 1 teaspoon dijon mustard
- 1 garlic clove, minced
- 1/2 teaspoon sugar
- 1 teaspoon salt
- 1/4 teaspoon pepper
- sliced black olives (to garnish)
Recipe
- 1 slice tomatoes and arrange in a shallow dish. sprinkle with parsley.
- 2 combine remaining ingredients, except olives, drizzle over tomatoes.
- 3 garnish with olives.
