Peppery Black Bean Salsa

Ingredients

  • Servings: 12
  • 4 jalapeno peppers, finely chopped
  • 2 (15 ounce) cans black beans, drained and rinsed
  • 2 cups fresh corn or 2 cups frozen corn
  • 1 medium sweet red pepper, diced
  • 1 cup chopped tomato
  • 1 medium red onion, chopped
  • 1/3 cup lime juice
  • 2 tablespoons minced fresh cilantro or 2 tablespoons parsley
  • 1 tablespoon minced garlic
  • salt

Recipe

  • 1 combine all ingredients in a bowl.
  • 2 stir and mix well.
  • 3 cover and chill.
