Corn & Bacon Casserole

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 6 slices bacon
  • 1/2 cup chopped onion
  • 2 tablespoons all-purpose flour
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup sour cream
  • 4 cups frozen corn, thawed
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh chives

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 cook bacon in a large skillet until crisp, drain reserving 2 tbs drippings.
  • 3 crumble bacon& set aside.
  • 4 heat drippings over medium heat,add onion& saute until tender.
  • 5 stir in flour, garlic,salt& pepper.
  • 6 cook 1 minute stirring constantly.
  • 7 remove from heat and stir in sour cream.
  • 8 add corn, parsley and half of bacon till well blended.
  • 9 pour mixture into a greased casserole dish.
  • 10 sprinkle with remaining bacon.
  • 11 bake 20-25 minutes or until thoroughly heated.
  • 12 sprinkle with chives& serve.
