Lemon Thyme Summer Squash

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 5 garlic cloves, minced
  • 10 summer squash, cut in chunks
  • 3 tablespoons olive oil
  • 1 tablespoon lemon peel, minced
  • 1 tablespoon fresh thyme, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Recipe

  • 1 heat olive oil in large skillet on medium heat.
  • 2 add garlic and sauté for 2 minutes until just turning golden.
  • 3 add squash, lemon and thyme ,reduce heat to medium low, cover and cook for 30 minutes, stirring occasionally.
  • 4 remove cover, increase heat to medium high and cook for 10 minutes, allowing accumulated fluid form the squash to reduce.
  • 5 season with salt and pepper.
  • 6 serve.
