Sri Lankan Prawn And Tomato Curry

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 tablespoon oil
  • 1 small onion, chopped
  • 2 lbs tomatoes, peeled and chopped
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon ground ginger
  • 1 tablespoon tamarind paste
  • 3 cups coconut milk
  • 3 garlic cloves, chopped
  • 1 1/2 lbs uncooked prawns, peeled

Recipe

  • 1 heat the oil in a pan and fry the onion till golden.
  • 2 add all of the ingredients except the prawns, simmer and cook till reduced by 1/3rd.
  • 3 add the prwns and cook gently till they are cooked.
