Sri Lankan Prawn And Tomato Curry

Ingredients

- 1 tablespoon oil
- 1 small onion, chopped
- 2 lbs tomatoes, peeled and chopped
- 1/2 teaspoon chili powder
- 1/2 teaspoon turmeric
- 1/4 teaspoon ground ginger
- 1 tablespoon tamarind paste
- 3 cups coconut milk
- 3 garlic cloves, chopped
- 1 1/2 lbs uncooked prawns, peeled
Recipe
- 1 heat the oil in a pan and fry the onion till golden.
- 2 add all of the ingredients except the prawns, simmer and cook till reduced by 1/3rd.
- 3 add the prwns and cook gently till they are cooked.
