Red Enchilada Sauce

Ingredients
- 2 tablespoons vegetable oil
- 2 tablespoons flour
- 1 tablespoon chili powder
- 2 cups water
- 3 ounces tomato paste
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
Recipe
- 1 combine oil, flour, & chili powder in medium sauce pan.
- 2 cook on medium heat & whisk ingredients.
- 3 continue to whisk until sauce bubbles.
- 4 let cook 1 minute, continue to whisk during this time.
- 5 after 1 minute whisk in water, tomato paste, cumin, garlic powder, & cayenne pepper.
- 6 bring to a simmer.
- 7 remove from heat. add salt, to taste, a quarter teaspoon at a time.
