Mixed Dahl

Ingredients

- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 hot red chili pepper, finely chopped
- 2 teaspoons grated fresh ginger
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 400 g diced tomatoes
- 1 1/4 cups vegetable stock
- 1/4 cup yellow split peas, soaked 30 mins, rinsed & drained
- 1/4 cup red lentil, rinsed & drained
- 1/4 cup brown lentils, rinsed & drained
- 1/4 cup chopped fresh cilantro
Recipe
- 1 heat oil in large saucepan over high heat. saute garlic, chilli and ginger for 3-4 mins until onions are tender.
- 2 add the cumin,ground coriander and tumeric. cook, stirring for 1 minute.
- 3 mix in the tomatoes, stock, split peas and lentils. bring to boil. reduce heat & simmer, covered, about 30 mins until dhal is tender.
- 4 stir half the fresh cilantro through. sprinkle with the remaining coriander, to garnish.
