Mixed Dahl

Total Time: 1 hr Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 1 hot red chili pepper, finely chopped
  • 2 teaspoons grated fresh ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 400 g diced tomatoes
  • 1 1/4 cups vegetable stock
  • 1/4 cup yellow split peas, soaked 30 mins, rinsed & drained
  • 1/4 cup red lentil, rinsed & drained
  • 1/4 cup brown lentils, rinsed & drained
  • 1/4 cup chopped fresh cilantro

Recipe

  • 1 heat oil in large saucepan over high heat. saute garlic, chilli and ginger for 3-4 mins until onions are tender.
  • 2 add the cumin,ground coriander and tumeric. cook, stirring for 1 minute.
  • 3 mix in the tomatoes, stock, split peas and lentils. bring to boil. reduce heat & simmer, covered, about 30 mins until dhal is tender.
  • 4 stir half the fresh cilantro through. sprinkle with the remaining coriander, to garnish.
