Seasoned Mashed Black Beans

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 6
  • cooking spray
  • 2 medium onions, chopped
  • 4 garlic cloves, minced
  • 1 -2 small jalapeno chile, minced
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 2 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/3 cup finely chopped cilantro leaf
  • salt and pepper

Recipe

  • 1 sauté onions, garlic and jalapeno in skillet until tender, 3-4 minutes.
  • 2 add beans and broth to skillet; cook over medium heat, coarsely mashing beans with a fork. stir in cumin and cilantro. season to taste with salt and pepper.
