Mixed Vegetable Coconut Curry

Ingredients

  • Servings: 8
  • 1 tablespoon coconut oil
  • 3 cups carrots, cubed
  • 2 onions, finely chopped
  • 2 stalks celery, finely diced
  • 4 garlic cloves, minced
  • 1 tablespoon minced ginger
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon cracked black pepper
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground turmeric
  • 1 bay leaf
  • 1 (28 ounce) can died tomatoes with juice
  • 4 cups winter squash, peeled and cubed
  • 1 cup coconut milk
  • 1 red bell pepper, seeded and diced
  • 1 chili pepper, seeded and minced

Recipe

  • 1 in skillet, sauté carrots, onion and celery and cook until softened, about 7 minutes.
  • 2 add garlic and spices and cook, stirring, for 1 minute. add tomatoes with juice and bring to a boil. transfer to slow cooker.
  • 3 stir in squash. cover and cook on low for 6 hours.
  • 4 add coconut milk, bell pepper and chile pepper and stir well.
  • 5 cover and cook on high for 15 minutes, until peppers are tender.
