Ingredients
- 4 medium tomatoes, cut into 1/4-inch-thick slices (about 2 pounds)
- 1/3 cup crumbled feta cheese with garlic and herbs
- 1/4 cup minced fresh parsley
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 garlic clove, pressed
- 1 small onion, very thinly sliced
Recipe
- 1 arrange tomato slices on a serving platter. (mix optional onion slices with tomatoes).
- 2 sprinkle feta cheese, parsley, (optional garlic) and pepper over tomatoes; drizzle with olive oil. serve immediately.
- 3 note: serving size = about 3 slices.
