Mixed Mushroom Topping For Mini Vegan Pizzas

Ingredients
- 2 tablespoons extra virgin olive oil
- 1 lb mixed fresh mushrooms, cleaned and sliced
- salt
- 1/8 cup fresh parsley, chopped
- 2 large garlic cloves
- 3 -4 tablespoons pizza sauce
Recipe
- 1 preheat oven to 500°f.
- 2 heat oil in a large nonstick saute pan over med-high. when hot, add mushrooms and sprinkle liberally with salt.
- 3 cook, stirring frequently, until mushrooms have given off their juices and liquid has been cooked away, leaving mushrooms shrunken and rich brown in color, about 10 minutes.
- 4 add parsley and garlic and cook, stirring constantly, until garlic has softened, about 3 minutes.
- 5 top each pizza crust with half the pizza sauce and half the mushroom mixture.
- 6 bake 7-8 minutes, until crust is golden brown and toppings are piping hot.
