Italian Sausage Frittata

Ingredients

- 1 1/2 lbs bulk italian sausage
- 8 ounces fresh mushrooms, sliced
- 2 tablespoons butter
- 1 garlic clove, minced
- 3 large swiss chard leaves, rolled and sliced thin
- 1 cup mild cheddar cheese, grated
- 14 large eggs
- 1 3/4 cups milk
- 2 tablespoons dijon mustard
Recipe
- 1 preheat oven to 350 degrees.
- 2 brown sausage in sauce pan and drain.
- 3 spread evenly over bottom of 9 x 13 baking dish.
- 4 sauté mushrooms and garlic in butter until almost all liquid is absorbed (you can add a few dashes of wine at this stage if you prefer.
- 5 spread mushrooms over sausage.
- 6 layer swiss chard and cheese over mushrooms.
- 7 in bowl beat the eggs, milk and dijon mustard and pour evenly over all.
- 8 place in oven on middle rack, bake uncovered for 1 hour, (or until middle is firm to touch).
- 9 remove from the oven, cover loosely with foil, and let stand 15-18 minutes. divide and cut into serving sizes.
- 10 top with green onions or sour cream (or both) if you desire.
