Italian Sausage Frittata

Ingredients

  • Servings: 6
  • 1 1/2 lbs bulk italian sausage
  • 8 ounces fresh mushrooms, sliced
  • 2 tablespoons butter
  • 1 garlic clove, minced
  • 3 large swiss chard leaves, rolled and sliced thin
  • 1 cup mild cheddar cheese, grated
  • 14 large eggs
  • 1 3/4 cups milk
  • 2 tablespoons dijon mustard

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 brown sausage in sauce pan and drain.
  • 3 spread evenly over bottom of 9 x 13 baking dish.
  • 4 sauté mushrooms and garlic in butter until almost all liquid is absorbed (you can add a few dashes of wine at this stage if you prefer.
  • 5 spread mushrooms over sausage.
  • 6 layer swiss chard and cheese over mushrooms.
  • 7 in bowl beat the eggs, milk and dijon mustard and pour evenly over all.
  • 8 place in oven on middle rack, bake uncovered for 1 hour, (or until middle is firm to touch).
  • 9 remove from the oven, cover loosely with foil, and let stand 15-18 minutes. divide and cut into serving sizes.
  • 10 top with green onions or sour cream (or both) if you desire.
