Roasted Zucchini

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 lb small zucchini
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon italian seasoning
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon salt

Recipe

  • 1 heat oven to 450.
  • 2 cut zucchini in half and then in quarters. then cut the strips in half again.
  • 3 mix the remaining ingredients and toss with the zucchini.
  • 4 place in a single layer on a baking sheet and bake for 15 minutes turning after 7 minutes. they are done when they are golden and tender.
