Pinto Beans

Ingredients

- 4 cups dried pinto beans
- 4 slices thick slab bacon, cut into 1 inch slices
- 1 teaspoon salt
- 2 teaspoons black pepper
- chili powder
- cayenne pepper
- garlic powder
- oregano
- sour cream
- fresh cilantro
- chopped red onion
- grated cheese
- pico de gallo
Recipe
- 1 rinse beans well and place in a large pot with the bacon; pour water over the top.
- 2 use enough water to cover the beans by 1-2 inches.
- 3 bring to a boil over med-high heat, reduce heat to low and cover; simmer 2-3 hours.
- 4 if liquid seems to evaporate to quickly, add more water during cooking process.
- 5 beans are done when tender without much bite to them.
- 6 add salt and pepper, stir, and taste.
- 7 adjust seasonings as necessary, add in other seasonings as desired.
- 8 serve with garnishes of choice.
