Pinto Beans

Total Time: 3 hrs 5 mins Preparation Time: 5 mins Cook Time: 3 hrs

Ingredients

  • Servings: 10
  • 4 cups dried pinto beans
  • 4 slices thick slab bacon, cut into 1 inch slices
  • 1 teaspoon salt
  • 2 teaspoons black pepper
  • chili powder
  • cayenne pepper
  • garlic powder
  • oregano
  • sour cream
  • fresh cilantro
  • chopped red onion
  • grated cheese
  • pico de gallo

Recipe

  • 1 rinse beans well and place in a large pot with the bacon; pour water over the top.
  • 2 use enough water to cover the beans by 1-2 inches.
  • 3 bring to a boil over med-high heat, reduce heat to low and cover; simmer 2-3 hours.
  • 4 if liquid seems to evaporate to quickly, add more water during cooking process.
  • 5 beans are done when tender without much bite to them.
  • 6 add salt and pepper, stir, and taste.
  • 7 adjust seasonings as necessary, add in other seasonings as desired.
  • 8 serve with garnishes of choice.
