Minted Pesto

Ingredients
- Servings: 8
- 1 cup fresh mint leaves (packed)
- 1/2 cup fresh parsley
- 2 garlic cloves, minced
- 2 tablespoons parmesan cheese, grated
- 2 tablespoons walnut pieces
- 2 -3 tablespoons olive oil
- 2 -3 tablespoons vegetable stock or 2 -3 tablespoons water
- salt and pepper
Recipe
- 1 process all ingredients except stock, salt and pepper or food processor or blender until smooth.
- 2 stir in enough stock to make a spoonable mixture; season to taste with salt and pepper.
- 3 serve at room temperature.
