Minted Pesto

Total Time: 5 mins Preparation Time: 5 mins

Ingredients

  • Servings: 8
  • 1 cup fresh mint leaves (packed)
  • 1/2 cup fresh parsley
  • 2 garlic cloves, minced
  • 2 tablespoons parmesan cheese, grated
  • 2 tablespoons walnut pieces
  • 2 -3 tablespoons olive oil
  • 2 -3 tablespoons vegetable stock or 2 -3 tablespoons water
  • salt and pepper

Recipe

  • 1 process all ingredients except stock, salt and pepper or food processor or blender until smooth.
  • 2 stir in enough stock to make a spoonable mixture; season to taste with salt and pepper.
  • 3 serve at room temperature.
