Lemony Marinated Beets

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 medium beets, scrubbed
  • 3 tablespoons lemon juice
  • 2 tablespoons coarsely chopped parsley
  • 1 tablespoon red wine vinegar
  • 2 garlic cloves, quartered
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • black pepper
  • 1/2 cup olive oil

Recipe

  • 1 place beets on baking sheet and bake for 1 hour, until tender.
  • 2 let beets cool until just cool enough to handle, then rub off skins.
  • 3 cut of ends of beets and cut into ¾ inch slices. transfer to a bowl.
  • 4 in food processor, process lemon juice, parsley, vinegar, garlic, cumin, oregano, salt and pepper to taste until smooth. slowly add olive oil.
  • 5 pour over beets and toss well. cover and refrigerate for at least 3 hours before serving, or up to 3 days.
