Red Lentils And Spinach

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 tablespoon oil
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 1 teaspoon paprika
  • 1 teaspoon coriander
  • 1 cup red lentil
  • 1 (14 ounce) can diced tomatoes
  • 2 cups spinach
  • 1 teaspoon ginger, root
  • 4 tablespoons fresh cilantro

Recipe

  • 1 heat oil, add garlic, then onion.
  • 2 add spices (30 sec).
  • 3 add lentils and 2 c water.
  • 4 cook until lentils are soft (10 min).
  • 5 add tomatoes, salt, spinach (10 min).
  • 6 cook until thickened.
  • 7 garnish with ginger and cilantro.
