Ingredients

- 1 tablespoon oil
- 3 cloves garlic, minced
- 1 onion, diced
- 1 teaspoon paprika
- 1 teaspoon coriander
- 1 cup red lentil
- 1 (14 ounce) can diced tomatoes
- 2 cups spinach
- 1 teaspoon ginger, root
- 4 tablespoons fresh cilantro
Recipe
- 1 heat oil, add garlic, then onion.
- 2 add spices (30 sec).
- 3 add lentils and 2 c water.
- 4 cook until lentils are soft (10 min).
- 5 add tomatoes, salt, spinach (10 min).
- 6 cook until thickened.
- 7 garnish with ginger and cilantro.
