Mussels Amore!

Ingredients

  • Servings: 2
  • 2 1/4 lbs mussels, cleaned
  • 1/2 cup dry wine
  • 2 green onions, chopped
  • 2 -3 garlic cloves, minced
  • 1/4 cup fresh dill, chopped plus extra to garnish
  • 1/4 cup fresh parsley
  • 1/4 teaspoon dried red chili pepper, to taste
  • 2 ripe plum tomatoes, chopped
  • 2 tablespoons butter

Recipe

  • 1 put the mussels in a casserole dish with the wine, over high heat, and bring to a boil,cover.
  • 2 cook for a few minutes only, until the mussels have opened, stirring frequently to ensure they are evenly cooked.
  • 3 add remaining ingredients except butter,cook over medium high heat for 3-4 minutes.
  • 4 add butter at the last minute.
  • 5 sprinkle with chopped dill and serve at once.
