Squash Casserole

Ingredients
- Servings: 4
- 3 cups diced squash
- 1 small onion, chopped
- 3 tablespoons olive oil
- 1 egg, slightly beaten
- 1/4 cup butter
- 1/3 cup mayonnaise
- 1 tablespoon sugar
- 1 cup grated cheddar cheese, divided
- 3/4 cup ritz cracker crumbs
- 1 dash garlic salt
- salt and pepper (to taste)
Recipe
- 1 saute squash and onion in olive oil; drain and put hot mixture in a bowl.
- 2 add egg, butter, mayonnaise, sugar, 1/2 cup cheese, cracker crumbs, garlic salt, salt and pepper; mix all together.
- 3 top with remaining 1/2 cup cheese and bake at 350 degrees for 20-30 minutes.
