Red Onion Preserves

Ingredients
- 2 lbs red onions, thinly sliced
- 8 fresh thyme sprigs, fresh
- 4 teaspoons garlic, chopped
- 2 tablespoons olive oil
- 1/2 cup port wine
- 1/2 cup dry red wine
- 1/2 cup grenadine
- 1/4 cup balsamic vinegar
- 1/4 cup sugar
- 1 1/4 cups water
Recipe
- 1 heat oil in a heavy pot over medium high heat.
- 2 add onioins, thyme and garlic. saute until onions are slightly softened, about 10 minutes.
- 3 add water everything else and bring to a boil gently until the onions are soft, liquid is reduced and mixture thickens to jam consistency. stir often during this time, about 30-40 minutes. add more water by 1/4 cupfuls to prevent sticking, as needed.
- 4 put into sterilized jars for long storage or can be kept in the fridge if it will be used soon.
- 5 before serving, reheat until just heated through.
