Mango Chutney

Ingredients
- 3 1/4 cups mangoes, fresh, peeled and chopped into 1/2-inch cubes
- 2 1/2 cups sugar
- 1 cup brown sugar, packed
- 1 cup apple cider vinegar
- 1/2 cup raisins
- 1/4 cup ginger, fresh grated
- 2 tablespoons garlic, minced
- 2 tablespoons salt
- 1 teaspoon ground cloves
- 1/2-1 teaspoon hot pepper, from a jar finely chopped
Recipe
- 1 make sure mangos are not too ripe or soft. they're easier to peel.
- 2 put into a large bowl; add sugars and stir well until sugars liquify. cover and let set on counter overnight.
- 3 pour into a large saucepan and add the rest of ingredients. stir well. bring to a boil, then reduce heat to a simmer. let simmer, stirring occasionally, 45 minutes or longer, or until as thick as gravy. pour into clean jars, (should make about 1 quart and a cup extra), and keep refrigerated. will keep months.
