Mango Chutney

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • 3 1/4 cups mangoes, fresh, peeled and chopped into 1/2-inch cubes
  • 2 1/2 cups sugar
  • 1 cup brown sugar, packed
  • 1 cup apple cider vinegar
  • 1/2 cup raisins
  • 1/4 cup ginger, fresh grated
  • 2 tablespoons garlic, minced
  • 2 tablespoons salt
  • 1 teaspoon ground cloves
  • 1/2-1 teaspoon hot pepper, from a jar finely chopped

Recipe

  • 1 make sure mangos are not too ripe or soft. they're easier to peel.
  • 2 put into a large bowl; add sugars and stir well until sugars liquify. cover and let set on counter overnight.
  • 3 pour into a large saucepan and add the rest of ingredients. stir well. bring to a boil, then reduce heat to a simmer. let simmer, stirring occasionally, 45 minutes or longer, or until as thick as gravy. pour into clean jars, (should make about 1 quart and a cup extra), and keep refrigerated. will keep months.
